Bí đỏ là nguồn giàu carbohydrate, chất xơ và các hợp chất có hoạt tính sinh học. Tuy nhiên, hàm lượng và độ ổn định của các hợp chất này dễ bị ảnh hưởng bởi đặc tính nguyên liệu cũng như các quá trình chế biến như chần, sấy và bảo quản. Việc nghiên cứu các biến đổi về tính chất hóa lý và thành phần dinh dưỡng, đặc biệt các hợp chất có hoạt tính sinh học như carotenoid (b-carotene, a-carotene, b-crypytoxanthin, lutein, zeaxanthin, lycopene), hoạt tính retinol tương đương (RAE), các hợp chất phenolic (TPC) và hoạt tính chống oxi hóa (ABTS) của bí đỏ từ giống, độ tuổi thu hoạch và điều kiện bảo quản bí đỏ đến áp dụng kỹ thuật tiền xử lý và chế biến sản phẩm từ bí đỏ như bánh mì sandwich và bột súp dinh dưỡng đã được thực hiện là cần thiết, mang ý nghĩa khoa học và thực tiễn cao. Nghiên cứu bao gồm ba nội dung chính: (1) Khảo sát ảnh hưởng của giống, độ tuổi thu hoạch và thời gian bảo quản đến chất lượng bí đỏ; (2) Khảo sát ảnh hưởng của phương pháp chần và sấy đến chất lượng bột bí đỏ; (3) Nghiên cứu phát triển sản phẩm bánh mì sandwich và bột súp dinh dưỡng có bổ sung bột từ bí đỏ.
Kết quả của nghiên cứu trên ba giống bí đỏ lai F1 (Super dream 59 – trái dài, Nông trường – hạt đậu và Hoàn cầu 36 – trái tròn) trong độ tuổi từ 60–80 ngày tuổi nhận thấy giống bí đỏ Super dream 59 – trái dài thu hoạch ở 70 ngày tuổi cho chất lượng tốt với hàm lượng cao các hợp chất hoạt tính sinh học (carotenoid, RAE, TPC, vitamin C) và hoạt tính chống oxi hóa ABTS. Khi bảo quản bí đỏ ở nhiệt độ phòng (31±7oC) và bảo quản mát (20±2oC) thì bí đỏ bảo quản ở nhiệt độ phòng trong 8 tuần làm tăng đáng kể carotenoid (237–273%) và RAE (249,1%), trong khi tổn thất TPC và ABTS dưới 22%. Bí đỏ cắt lát (2 mm) được chần với hơi nước, nước nóng (85–95oC) và có hỗ trợ của vi sóng (150–450 W) cho kết quả chần bằng hơi nước đạt hiệu quả vô hoạt POD tốt nhất (k = 0,0391 giây⁻¹) và bảo toàn tốt các hợp chất hoạt tính sinh học so với chần nước nóng và vi sóng. Bí sau khi chần được sấy đối lưu không khí nóng (50–70oC) và sấy bơm nhiệt (20–30oC) đến độ ẩm bột < 7%, đạt kết quả là sấy bơm nhiệt ở 30°C trong 24 giờ với mức tổn thất thấp đối với carotenoid và RAE (10%) và TPC (28%), đồng thời bảo toàn vi cấu trúc (SEM, FTIR) của bột bí đỏ hơn so với sấy đối lưu không khí nóng. Mô hình Midilli–Kucuk mô tả tốt động học của quá trình sấy bí đỏ so với 7 mô hình còn lại. Ngoài ra, bột bí đỏ được ghi nhận là ổn định tính chất hóa lý (p > 0,05), nhưng giảm carotenoid (31–36%), TPC (20,5%) và ABTS (14,3%) sau 6 tháng bảo quản. Tiếp theo, bột bí đỏ được ứng dụng để phát triển sản phẩm (i) bánh mì sandwich bổ sung 10% bột bí đỏ có chất lượng cảm quan tốt (7,95/9 điểm), tăng đáng kể carotenoid, RAE, TPC và ABTS, cải thiện khả năng giữ nước và làm chậm quá trình tiêu hóa tinh bột; khi tối ưu hóa điều kiện lên men lần 2 bằng phương pháp bề mặt đáp ứng (RSM) xác định được lên men lần 2 ở 36oC trong 119,7 phút; tiếp theo bánh mì được nướng ở 180oC trong 20 phút, sản phẩm bánh mì cung cấp 8,1–15,0% năng lượng theo nhu cầu khuyến nghị trên 100 g theo căn bản khô (CBK). Đối với sản phẩm súp dinh dưỡng (ii) có bổ sung bột thịt/ruột bí đỏ (tỷ lệ 9/1) ở tỷ lệ thay thế 50% nhận thấy là công thức phù hợp nhất giúp tạo ra sản phẩm súp đạt chất lượng về cảm quan, tăng hàm lượng carotenoid, RAE, TPC, axit amin thiết yếu và hoạt tính chống oxi hóa, đồng thời giảm tốc độ tiêu hóa (k = 0,0063 so với k = 0,0090 của đối chứng). Mỗi 100 g (CBK) sản phẩm súp cung cấp 15–42% năng lượng và 26,4–64% RAE theo nhu cầu khuyến nghị. Kết quả nghiên cứu cho thấy việc lựa chọn giống bí và độ tuổi phù hợp kết hợp với chần hơi nước và sấy bơm nhiệt là một hướng tiếp cận chuyên sâu và hiệu quả nhằm bảo toàn giá trị dinh dưỡng, đặc biệt là các hợp chất hoạt tính sinh học. Nghiên cứu này đã đóng góp vào việc nâng cao giá trị của bí đỏ và đa dạng hóa các sản phẩm thực phẩm dinh dưỡng từ bí đỏ.
Nghiên cứu đã xây dựng được bộ cơ sở dữ liệu về thành phần dinh dưỡng và chức năng của ba giống bí đỏ lai F1 (Super dream 59, Hoàn cầu 36 và Nông trường) theo độ tuổi thu hoạch. Đồng thời, đánh giá sự biến đổi chất lượng của giống bí đỏ được chọn trong 10 tuần bảo quản.
Chứng minh hiệu quả của phương pháp chần bằng hơi nước (90 giây) so với chần bằng nước nóng và vi sóng trong việc vô hoạt enzyme POD mà vẫn duy trì tốt các hợp chất có hoạt tính sinh học như carotenoid, RAE, TPC và hoạt tính chống oxi hóa thông qua phân tích động học của của sự vô hoạt POD, động học sự tổn thất RAE, TPC và hoạt tính chống oxi hóa trong bí đỏ giúp đánh giá và lựa chọn phương pháp chần một cách khoa học.
Đánh giá động học quá trình sấy từ hai công nghệ sấy bao gồm sấy đối lưu không khí nóng và sấy bơm nhiệt, xác định được phương pháp sấy bơm nhiệt tại 30oC để sản xuất bột bí đỏ giúp mang lại hiệu quả trong việc giảm tổn thất các hợp chất có hoạt tính sinh học (carotenoid, TPC và RAE) và hoạt tính chống oxi hóa, hạn chế biến đổi tính chất hóa lý và cấu trúc vi mô so với sấy đối lưu không khí nóng.
Xây dựng công thức tối ưu cho qui trình sản xuất bánh mì sandwich có bổ sung bột từ thịt bí đỏ và bột súp dinh dưỡng có bổ sung bột từ thịt và ruột bí đỏ với các tính chất hóa lý, thành phần dinh dưỡng, thuộc tính cảm quan (PCA), năng lượng đáp ứng theo RDA của Bộ Y Tế và khả năng tiêu hóa trong ống nghiệm đã được xác định. Kết quả nghiên cứu cho thấy tiềm năng phát triển thực phẩm dinh dưỡng, có lợi cho sức khỏe từ bí đỏ.
3.1 Khả năng ứng dụng trong thực tiễn
Kết quả nghiên cứu của luận án có thể được ứng dụng trong việc lựa chọn giống, độ tuổi thu hoạch và thời gian bảo quản phù hợp nhằm cung cấp nguyên liệu bí đỏ có chất lượng cao cho chế biến thực phẩm. Quy trình chần bằng hơi nước và sấy bơm nhiệt được đề xuất có khả năng ứng dụng trong sản xuất bột bí đỏ nhằm bảo toàn các hợp chất có hoạt tính sinh học, nâng cao chất lượng nguyên liệu và giá trị gia tăng của sản phẩm. Bột bí đỏ thu được có thể được sử dụng làm nguyên liệu trong phát triển các sản phẩm thực phẩm như bánh mì sandwich và bột súp dinh dưỡng, góp phần đa dạng hóa sản phẩm, nâng cao giá trị sử dụng của bí đỏ và đáp ứng xu hướng phát triển thực phẩm có lợi cho sức khỏe. Các kết quả về động học quá trình chần và sấy, cùng với dữ liệu về đặc tính hóa lý, chức năng và khả năng tiêu hóa của sản phẩm, cũng có thể được sử dụng làm cơ sở khoa học cho nghiên cứu, thiết kế và tối ưu hóa quy trình chế biến ở quy mô sản xuất.
3.2 Các vấn đề cần tiếp tục nghiên cứu
Cần nghiên cứu sự ổn định chất lượng của bột bí đỏ, bánh mì và bột súp trong các điều kiện bao gói, bảo quản khác nhau, kết hợp ứng dụng công nghệ bảo quản hiện đại và xây dựng mô hình dự đoán thời hạn sử dụng. Đồng thời, tiếp tục phát triển các sản phẩm thực phẩm chức năng từ bí đỏ (hỗ trợ kiểm soát đường huyết), tận dụng phụ phẩm như hạt bí, và thử nghiệm quy mô pilot để đánh giá tính khả thi và ổn định trong sản xuất công nghiệp.

Pumpkin is a rich source of carbohydrates, dietary fiber, and bioactive compounds. However, the content and stability of these compounds are strongly influenced by pumpkin characteristics as well as processing conditions, including blanching, drying, and storage. Therefore, investigating changes in physicochemical properties and nutritional compositions, particularly bioactive compounds such as carotenoids (β-carotene, α-carotene, β-cryptoxanthin, lutein, zeaxanthin, and lycopene), retinol activity equivalents (RAE), total phenolic content (TPC), and antioxidant activity (ABTS), from pumpkin cultivar, harvest maturity, and storage conditions to pre-treatment techniques and the development of pumpkin-based products such as sandwich bread and nutritional soup powder, is necessary and scientific and practical. This study consisted of three main objectives: (1) to investigate the effects of cultivar, harvest maturity, and storage duration on pumpkin quality; (2) to evaluate the effects of blanching and drying methods on the quality of pumpkin powder; and (3) to develop sandwich bread and nutritional soup powder supplemented with pumpkin powder.
The results obtained from three F1 hybrid pumpkin cultivars, namely Super Dream 59 (elongated fruit), Nong Truong (bean-shaped fruit), and Hoan Cau 36 (round fruit), harvested at 60 to 80 days, showed that Super Dream 59 harvested at 70 days exhibited superior quality quality, characterized by higher levels of bioactive compounds (carotenoids, RAE, TPC and vitamin C) and greater ABTS antioxidant activity. Under both conditions of ambient storage (31±7°C) and cool storage (20±2°C), pumpkins stored at ambient temperature for 8 weeks showed significant increases in carotenoids (237–273%) and RAE (249.1%), while losses of TPC and ABTS below 22%. Pumpkin slices (2 mm thick) were subjected to steam, hot-water (85–95°C), and microwave-assisted blanching (150–450 W). Among the treatments, steam blanching achieved the most effective POD inactivation (k = 0.0391 s⁻¹) and better retention of bioactive compounds compared with hot-water and microwave-assisted blanching. Following blanching, the pumpkin samples was dried using hot-air drying (50–70°C) and heat-pump drying (20–30°C) until the moisture content decreased to below 7%. Heat-pump drying at 30°C for 24 h resulted in the lowest losses of carotenoids (10%) and RAE (10%), and of TPC (28%), while also better preserving the microstructure (SEM, FTIR) of the pumpkin powder than hot-air drying. In addition, the Midilli–Kucuk model provided the best fit for describing the drying kinetics of pumpkin among the eight tested models. Pumpkin powder was also found to remain physicochemically stable during storage (p > 0.05), although carotenoids, TPC, and ABTS antioxidant activity decreased by 31–36%, 20.5%, and 14.3%, respectively, after 6 months of storage. Subsequently, pumpkin powder was applied in product development. For sandwich bread, supplementation with 10% pumpkin powder resulted in acceptable sensory quality (7.95/9), significantly increased carotenoids, RAE, TPC, and ABTS antioxidant activity, enhanced water-holding capacity, and reduced the starch digestion rate. Optimization of the second fermentation conditions using response surface methodology (RSM) indicated that the optimal condition was 36°C for 119.7 min. The sandwich was then baked at 180°C for 20 min, and the final product provided 8.1–15.0% of the recommended dietary allowance (RDA) for energy per 100 g dry basis (db). For nutritional soup powder, a 50% substitution level using a mixture of pumpkin flesh powder and inner tissue powder at a ratio of 9:1 was identified as the most appropriate formulation, resulting in acceptable sensory quality, increased contents of carotenoid, RAE, TPC, and essential amino acid, enhanced antioxidant activity, and a reduced starch digestion rate (k = 0.0063 compared with 0.0090 in the control). Each 100 g db of the soup product provided 15–42% of the recommended energy intake and 26.4–64% of the RAE requirement according to the RDA. Overall, these findings indicate that selecting an appropriate pumpkin cultivar and harvest maturity, combined with steam blanching and heat-pump drying, is an effective approach for preserving nutritional value, particularly bioactive compounds. Established a comprehensive database on the nutritional composition and functional properties of three F1 pumpkin hybrids (Super Dream 59, Hoan Cau 36, and Nong Truong) at different harvest maturities, and evaluated the quality changes of the selected cultivar during 10 weeks of postharvest storage.
Clarified the kinetics of peroxidase (POD) inactivation and the degradation kinetics of bioactive compounds (carotenoids, retinol activity equivalents (RAE), total phenolic content (TPC), and antioxidant activity) during steam, hot-water, and microwave blanching. The results demonstrated that 90 s steam blanching was the most suitable method for achieving effective POD inactivation while retaining bioactive compounds, providing a scientific basis for blanching process selection.
Investigated the drying kinetics of pumpkin using hot-air convection drying and heat-pump drying, identified appropriate kinetic models, and demonstrated that heat-pump drying at 30°C better preserved bioactive compounds (carotenoids, TPC, and RAE), antioxidant activity, physicochemical properties, and microstructure compared with hot-air drying.
Developed processing formulations for sandwich bread supplemented with pumpkin flesh powder and nutritious soup powder supplemented with a mixture of pumpkin flesh and seed cavity powders. The selected formulations were comprehensively evaluated in terms of physicochemical properties, nutritional composition, sensory attributes (PCA), energy contribution based on the Vietnamese Recommended Dietary Allowance (RDA), and in vitro starch digestibility, demonstrating the potential of pumpkin powder for the development of value-added nutritious foods.
3.1 Application prospect for further study
The findings of this dissertation can be applied to the selection of appropriate pumpkin cultivars, harvest maturity, and postharvest storage conditions to obtain high-quality raw materials for food processing. The proposed steam blanching and heat pump drying processes have strong potential for pumpkin powder production by preserving bioactive compounds, improving raw material quality, and increasing product value. The resulting pumpkin powder can be used as an ingredient in the production of sandwich bread and nutritious soup powder, contributing to product diversification, enhanced utilization of pumpkin, and the development of health-promoting foods. Furthermore, the kinetic data obtained for blanching and drying, together with information on the physicochemical, functional, and digestibility properties of the products, provide a scientific basis for process design, optimization, and scale-up in food manufacturing.
3.2 Suggestions for further study
Further studies should investigate the quality stability of pumpkin powder, sandwich bread, and soup powder under different packaging and storage conditions, combined with advanced preservation technologies and shelf-life prediction models. Future research should also focus on developing pumpkin-based functional foods with potential blood glucose-regulating properties, utilizing pumpkin by-products such as seeds, and conducting pilot-scale production trials to evaluate process feasibility and product stability under industrial manufacturing conditions.
